Chilled alkaline noodles, crisp cucumber, ham, tomato, and shredded egg over an ice cold sweet and sour soy tare. This is the hiyashi chuka Japan actually eats all summer long, and the sauce comes together in one small container.
Ingredients (3 servings):
For the tare
- 3 tbsp Japanese soy sauce (koikuchi shoyu)
- 3 tbsp unseasoned rice vinegar (komezu)
- 1½ tbsp sugar
- 1 tbsp toasted sesame oil
- 1 tbsp cold water
- ⅛ tsp dashi granules
For the kinshi tamago
- 1 egg
- 1 pinch salt
- ½ tsp sugar
- 1 tsp cooking oil (neutral)
- 1 tsp water
- ½ tsp potato starch
For the noodles
- 3 portions ramen noodles (alkaline chuka-men)
- 1 tsp toasted sesame oil
Toppings
- 1 Japanese cucumber (julienned)
- 1 tomato (thinly sliced)
- 30 g ham (julienned)
- Japanese mayonnaise (optional)
- chili oil (rayu) (optional)
- toasted white sesame (optional)
- red pickled ginger (benishoga) (optional)
