This Cinnamon Swirl Bread is absolutely delicious. You can easily make this Cinnamon Raisin Bread by adding in 1/2 cup of raisins when making the dough.
Recipe
2 1/4 tsp. Yeast
1 C milk, warmed
1/3 C Brown Sugar
6 Tbsp. melted butter or oil
2 eggs
3 1/2 C All Purpose Flour
1 1/4 tsp. Cinnamon
1 tsp. Salt
1/2 C Raisins *optional
1. Combine the warm milk, yeast, and brown sugar in the bowl of a stand mixer. Let sit for 5 minutes until frothy.
2. Add in the oil and eggs, mix, and then add in the flour, cinnamon, and salt. Using the dough hook attachment, knead for 10 minutes. Dough should be sticky. Form into a ball and oil the bowl and dough. Cover with a towel and let rise for 1-2 hours, until doubled in size.
3. Make the filling by combining 1/4 c brown sugar, 2 tbsp. cinnamon, and 3 tbsp. melted butter. Set aside.
4. Grease loaf pan. Preheat oven to 375°.
5. Using your loaf pan as a guide, roll dough into a rectangle. Try not to go any wider than the pan. Spread filling on dough and roll up. Place in loaf pan and allow to rise for an additional 30 minutes.
6. Bake for 40-50 minutes.
