Memorial Day is a day to pause and remember those who gave it all so that we have the freedom to *have* this day, and to thank those who are making huge sacrifices to protect that freedom this very minute! It's also the first holiday of summer, and a perfect excuse for some grillin' and chillin'. So...

I smoked some chicken thighs over apple wood, shredded them, made killer sammiches with them, and cooked up a batch of Crowder Peas as a side. Throw in some deviled eggs and it's a party in your mouth!
