This is the second of two parts, celebrating Cinco De Mayo. Yesterday I smoked an eye of round to use in these, and today I make the Gorditas themselves.

Ingredients:
2 cups (8 oz by weight) Masa
1 tsp Baking powder
1/2 tsp salt
1 TBS Vegetable oil
1 1/4 cups water (approx)
Oil for frying
Mix dry ingredients together.
Add oil and enough water to make a firm dough. Knead for a minute or so.
Divide into quarters, flatten to 1/3 " thick.
Cook in dry skillet over high heat for 1 1/2 minutes per side, then fry in deep fryer or skillet (with 1" of oil) at 375° F for 2 minutes, flip and cook 30 seconds longer, until light golden brown.
Slit open to make a pocket, and fill with whatever suits your mood. I used the smoked beef I did yesterday, with refried beans, salsa, lettuce, green onion, grated pepper jack cheese, sour cream, and Jalapenos. Yummy!!
