Gulasch Recipe
4 onions, thinly sliced into half-moons
3 beef shanks (Beinscheiben), around 1kg
50 g butter
1 tsp sugar
1 tsp salt
150 g red wine
1 Tbsp tomato paste
3 Tbsp paprika powder (sweet)
1 Tbsp smoked paprika
1 Tbsp mixed dried herbs
1 Tbsp caraway seeds
1 bay leaf
Water (enough to cover meat)
3 slices lemon
Salt & pepper to taste

Serviettenknödel (Bread Dumplings)
3 stale bread rolls
1 Tbsp butter
1/2 onion, finely diced
100 ml milk
1 small handful fresh parsley, finely chopped
Pinch of nutmeg
Salt & pepper, to taste
1 egg
Extra butter (optional, for pan-searing)

Garnish
Fresh parsley, chopped
Lingonberries (optional but recommended)
