Banh Xeo Batter Recipe

100 g rice flour
25 g wheat flour (all-purpose)
1 tsp turmeric
1/2 tsp salt
1 small scallion, sliced
260 ml cold water
200 ml coconut milk

Filling

250 g thin-sliced pork belly
300 g shrimp (26/30)
1 small white onion or shallot, sliced
200 g mung bean sprouts

Herbs & Greens

Romaine lettuce leaves
Perilla leaves
Thai or Vietnamese basil
Cilantro

Dipping Sauce (Nuoc Cham)

45 ml fish sauce
45 g sugar
90 ml hot water
45 ml lime juice
