Filipino food is not very well known - but it should be! Today we cook some authentic recipes from the Philippines. This is my take on Chicken Adobo, garlic rice and Filipino eggplant salad (ensaladang talong / tortang talong)!

► Chicken Adobo Recipe 🍗
2 chicken thighs + 2 drumsticks
1/2 cup light soy sauce
1/2 cup white vinegar (rice vinegar is best)
1/4 cup dark soy sauce
1 tangerine, juiced
1 lime, juiced
8 cloves of garlic, crushed
4 bay leaves
1 Tbsp black peppercorns
2 thick slices of ginger, crushed
2 stalks lemongrass, crushed

2 Tbsp coconut oil

1/3 cup coconut milk

scallions for garnish

► Garlic oil
1/2 cup of oil
1 head of garlic, minced

► Eggplant salad dressing
1/4 cup light soy sauce
1/4 cup white rice vinegar
1/2 red chili, thinly sliced
1 clove of garlic, thinly sliced
a few cracks of black pepper
