This Method will work EXACTLY as shown on PS2, Xbox, PC, Mobile, and Definitive Edition since all of these Platforms/Versions allow the Method shown in the Video.
Make sure you have the Heat Seeking RPG before you begin the Mission. You can find one inside of the San Fierro Airport. You can use a regular RPG, too, but you'll need to be quick and more skilled for that.
The Pony can spawn in two Variations. One with an empty trunk and one with a sound system inside. Reload until the Variation spawns you like the most and then obtain it. The Variations are NOT SPECIAL.
If you were to have 49 Special Vehicles in your collection by this stage of the game (which is possible), then you actually would NOT have any room whatsoever to store this EC Pony! You would have to obtain it and keep it in memory whilst completing the next Mission "Yay Ka-Boom-Boom" which would unlock The Desert, thus allowing you to buy another Safehouse with a Garage to store it.
