Today I’m making Green Beans with Minced Pork and Chinese Olive Vegetable, a simple Southern Chinese style stir fry made with green beans, minced pork, garlic, and Chinese olive vegetable.

The green beans are blanched first so they stay tender crisp, while the minced pork is cooked slowly until it starts to brown and become fragrant. Chinese olive vegetable provides the distinctive savory and slightly salty flavor that makes this dish different from a typical green bean stir fry.

In this video, I’ll show you how I prepare the green beans, cook the minced pork, sauté the Chinese olive vegetable, and bring everything together in the wok.

Recipe
Ingredients:
250g green beans
150g ground pork
2 tablespoons Chinese olive vegetable
4 cloves garlic, finely chopped
1 tablespoon cooking oil
1 tablespoon light soy sauce
1/2 teaspoon salt
1/4 teaspoon ground white pepper
2 tablespoons cooking oil for frying
1 teaspoon sesame oil

Instructions:
1. Snap off both ends of the green beans and remove the fibrous strings. Cut the beans into pieces about 2 inches long.
2. Bring a pot of water to a rolling boil. Add the salt and green beans. Blanch for about 2 minutes until tender crisp and fully cooked. Remove and drain well.
3. Heat 1 tablespoon cooking oil in a wok over low heat. Add the ground pork and white pepper. Cook for about 3 to 4 minutes, stirring occasionally, until the pork starts to render its fat and turns slightly brown.
4. Remove the cooked pork from the wok. Add the remaining cooking oil and sauté the chopped garlic over medium low heat until aromatic.
Add the Chinese olive vegetable and sauté briefly over low heat to bring out its flavor.
5. Turn up the heat and add the drained green beans. Stir fry briefly.
Add the light soy sauce and return the minced pork to the wok. Stir fry everything together.
6. Taste and adjust the seasoning if necessary, keeping in mind that Chinese olive vegetable can already be salty.
7. Drizzle with sesame oil, toss briefly, and serve.
