Ingredients
For the Marinade
750 g chicken drumsticks
1 tablespoon minced garlic
1 tablespoon minced ginger
1 tablespoon Malaysian curry powder
1 tablespoon coriander powder
1/2 teaspoon turmeric powder
1/2 teaspoon cumin powder
1 1/2 tablespoons plain yogurt
1/2 teaspoon salt
For the Coating
4 tablespoons cornstarch
4 tablespoons all-purpose flour
1/4 teaspoon salt
Other Ingredients
Oil (for brushing or spraying the chicken surface)
2 sprigs of curry leaves (optional, for garnish)
Steps
1. Prepare the Chicken. Make several slits on the thickest part of each drumstick to help the marinade penetrate deeply.
2. Make the Marinade. In a bowl, combine all the ingredients for the marinade. Mix well until evenly combined.
3. Marinate. Rub the marinade thoroughly over the chicken, ensuring it gets into the slits.
Cover and refrigerate for at least 6 hours, preferably overnight. Before air frying, let the chicken sit at room temperature for 20–30 minutes.
4. Prepare the Coating. In a clean bowl, mix cornstarch, all-purpose flour, and salt. Stir until evenly combined.
5. Coat the Chicken. Coat each drumstick evenly with the flour mixture. Shake off any excess flour. Let the coated chicken rest for 10 minutes to help the coating adhere.
6. Apply Oil. Lightly spray or brush oil over the surface of the chicken to promote browning and crispiness.
7. Air Fry. Preheat the air fryer to 190°C (374°F). Air fry for 20 minutes At the 10-minute mark, flip the chicken and lightly brush or spray with more oil for even cooking.
8. Final Crisping. Increase temperature to 230°C (446°F). Air fry for another 5 minutes until golden brown and crispy.
9. Optional Garnish. Heat oil in a small pan and fry two sprigs of curry leaves until crispy.
Serve alongside the air fried chicken.
