Finally got this one documented as well.
0:00 - The basic idea is pretty simple. Emblem of Elusion is an amulet which makes your roll and evade move a longer distance. If you equip this amulet in the middle of a roll, Kratos gets a sudden burst of speed. Doing this with a roll is more effective than with an evade, and you also get a bigger result if you do this late into the animation.
The reason for why this happens is probably that Kratos gets the adjusted bonus speed of the ongoing evade or roll interpolated to the remaining part of the animation, resulting in him gaining a lot of speed nearly instantly.
As a side note, I've heard from Pico this exact same mechanism works in GoW 2018 as well, although with fewer opportunities to go out of bounds (and less glitch testing in general) it hasn't turned out too useful so far.
0:31 - Unequipping the Emblem also has a speed boosting effect, although it's generally smaller.
0:42 - If you to this technique off a ledge, Kratos gets to keep the boosted speed for longer. The optimal timing is difficult to find, but at best Kratos can "zip" through the air and fly a long distance.
To note: if you equip Emblem of Elusion at the very last moments of a roll, Kratos zips forward for only a few meters before losing the additional speed. So for flying through air, you don't want the last possible timing for this tech.
1:10 - As an obscure side note, the sudden speed given by Emblem can be used to sneak ground buffers from a roll or an evade to activate in air. Normally any ground buffer from a roll will not activate in air.
1:22 - As a more helpful side note, sometimes you can find upwards slanting ledges in out of bounds geometry. If you rush off them with high velocity, Kratos is able to gain height. Huldra Charge is one action that works for this purpose, but the Emblem speed glitch can create a bona fide launch and it's even used in some speedrun categories. Credits to Pico for discovering the shortcut in this clip as well as the concept of using Emblem speed glitch for launches.
