Here's one suggested set-up for defeating the Manticore quick on New Game+ using the health break-point exploit as seen on the previous video.
This tactic is nowhere near 100% guaranteed. One problem is that phase 1 Manticore is nimble and flying, and cannot be reliable hit with any attack. Second problem is that the Manticore can use a variety of attacks at the very start of the fight and is unpredictable. Third problem is that Manticore gets a lot of i-frames during its animations - most notably when it lands - which messes up the timing for this strategy. Fourth problem is that you cannot use Soul Rage hit count to accurately judge the enemy's health because Soul Rage can sometimes give fake hits even while an enemy is invincible.
This video shows a rather optimal scenario where Manticore barely does anything. You can safely cast three Soul Rage and then Ice Rage the foe once the hit count is approaching 70. I stay near the north side of the level because this way you're close to the grapple switch when it comes active.
After skipping the health break-point, the Manticore becomes a fair bit more passive, despite its flight. So it becomes somewhat easy to whittle down its remaining health using melee attacks.
You basically have to observe Manticore and change the timing of Ice Rage depending on which actions it takes. Or alternatively, if the Manticore flies all over the place and has too many i-frames, you may have to cast one additional Soul Rage to finish it off. At any rate, it doesn't waste a lot of time to at least go for this speed tactic in a run, and it will pay off with a 20-second time save if successful.
