If you would like to make a vegetarian version of this you can substitute the chicken stock for vegetable stock.; and for the chicken you can add more beans, corns, onions, and even mushrooms. Recipe below.
Chicken Tortilla Soup Recipe
- 2 Chicken Breasts
- 8 Cups of Chicken Broth
-1-2 Jalapenos (depending on spice level, you can opt out or add more)
- 1 Serrano (for more heat and flavor) cut in thin slices with the seeds
- 1 Red Onion (1/2 for base and remaining to use as garnish)
- 1 Medium Onion (Chopped)
- 1 Can of Black Beans
- 1 Can of Sweet Whole Corn
- 1 Clove of Garlic
- 1 tbsp Chili Powder
- 1 tbsp of Cumin
- 1 Can of Crushed Tomato
- 1-2 tbsp of salt (To Taste)
Garnish
- Avocado
- Cheddar Cheese
- Sour Cream
- Green Onion
- Red Onion
- Tortilla Chips
- Cilantro
Directions
1. Heat a large pot on med/high heat with vegetable oil; add red and sweet onions, minced jalapenos and Serrano until onion is translucent in color. Add minced garlic, cumin, chili pepper, salt and pepper. Mix well and allow the spices to cook.
2. Add Chicken broth and bring to a boil. Once broth is boiling add the cleaned chicken breast * there should be enough broth to cover the chicken breasts. If there is not enough broth add more broth to cover the chicken breast or water. Cook the chicken in the broth until the chicken is fully cooked and pulls apart.
3. Take chicken breasts out and pull apart with a fork. Once pulled, add back in broth with the black beans, corn and the crushed tomatoes. Season additionally to taste (important) and allow to cook.
4. Once you have it to your liking, top the soup with sour cream, shredded cheddar cheese, tortilla chips, red and green onion, cilantro and avocado.

![DIY Gourmet Ramen from Instant Noodles
Instant Noodles is a cheap college staple, but it isnt all that healthy. On this episode, we cover how to cook instant ramen into a gourmet Ramen noodles recipe.
** Recipe (2 Large Servings) **
2 Ramen Packages
2 Eggs
3 Bok Choy bulbs (halved or quartered)
2 Cups of mushrooms (Sliced)
1 Medium Onion (Chopped)
1 tbsp of Miso Paste [Optional]
1/2 Cup of green Onion (Chopped) [Optional]
1/2 Cup of Silken Tofu (Chopped) [Optional]
1/2 Cup of Enoki Mushrooms [Optional]
1/4 Cup Of Jalapenos (Chopped) [Optional]
Bonito Seasoning to Taste [Optional]
Fish Sauce to Taste [Optional]
Instructions:
1. Bring large pot of water to boil. Then add eggs and cook for 5 minutes for a medium egg. Remove eggs from hot water and drop into an ice bath to make it easier to peel.
2. Separately, bring amount of water required for two ramen packages to a boil.
3. In a large pan, on medium high heat, add in 2 tbsp of oil, then onions and mushrooms. Once the onions and mushrooms starts to brown, add bok choy, and gently mix. Add noodle packs, hot water, and spice mix. If a stronger, and saltier flavour is desired, add 1 heaping tbsp of Miso paste, and turn heat off.
4. Peel cooked egg and cut in half. Serve soup in a bowl, add mushrooms and bok choy on top, and top with desired toppings. You can use so many different types of toppings, but Ive made some of my favourite recommendations.
