One of my favourites. I made chicken pastilla years and years ago for episode 5 on this channel... we all know my skill level then. A few years ago I travelled to Morocco and had the real, authentic thing... life changing moment. I picked up the North African cookbook by Jeff Koehler and this chicken pastilla was in the book... and now on the menu.

Recipe from North African cookbook:
(serves 6)
chicken filling:
2 tb olive oil
1 red or yellow onion, chopped
1 clove of garlic, minced
4 bone-in chicken thighs and/or drumsticks, skin removed
2 tb flat leaf parsley, finely chopped
2 tb cilantro, finely chopped
1 tsp sugar
1 tsp ground ginger
1 tsp cinnamon
salt and pepper
egg filling:
4 large eggs, beaten
for the almond filling:
150 g (1 cup) whole almonds
oil for frying
2 tb sugar
1 tb butter
1 tsp orange blossom water
1/4 cinnamon
for assemblyL:
oil or melted butter, for brusing
9 round of phyllo pastry
1 egg yolk
icing sugar
cinnamon
mint

The one thing that can help me escape the winter doldrums is a stew like this. Beef and Guinness Stew, on the same level as Beef Bourguignon, Carbonade a la Flamande! Throw is in Guinness Soda Bread is everything is going to be OK.

Traditional Beef and Guinness Stew:
2 tablespoons beef drippings or
extra-virgin olive oll
2 pounds (900g) stewing steak, cut into 1-inch (2.5cm) pieces
2 onions, sliced
2 celery stalks, finely chopped
3 carrots, peeled and cut into
2-inch (5cm) chunks
2 tablespoons all-purpose flour
One 14.9-fluid-ounce (440ml) can Guinness Draught Stout
1 cup (240ml) beef stock
1 tablespoon apple jelly or red currant jelly
2 tablespoons tomato paste
1 teaspoon Dijon mustard or Chile Extra Stout
