The cheese makes a creamy warm egg filling in my Breakfast Burritos recipe with ham and a dash of shallot, for a breakfast worth making. You will want to make these Breakfast Burritos again and again. It is easier than it looks.
Ingredients:
8 eggs
1 Tablespoon parmesan
dash of salt
1/4 cup cream or milk (both work just fine)
5 - eight inch flour tortillas or 4 - ten inch tortillas
butter for cooking
2 Tablespoons minced shallot or green onion (white part)
1/2 cup cubed ham
1 cup shredded cheese of your choice that sounds good to you
additional parmesan and butter
I cook all of this over fairly low temperature with the butter and it is easier to control the eggs not going too dry or overcooked.
Mix your eggs, parmesan, salt and cream or milk to combine.
Cook your onion and ham in two Tablespoons butter over low heat till the shallots are soft.
Add your eggs and gently cook till almost done.
Add your cheese and take the pan off heat.
Put your eggs into your warmed tortillas and then into your pan warmed with butter to cook 2 minutes per side.
Add parmesan on the outside of the tortillas and some butter if desired.
Serve with sour cream and salsa if desired.
I strongly recommend at least some salsa of your choice.
