Discover the secret of red pickle chips with Mama Vera! Made from an over abundance of cucumbers from your garden, these chips are great for the holidays or anytime.

Ingredients:
2 Gallon of cucumbers / peeled, seeded & diced
8 1/2 pints water
2 cups pickling lime.
Combine the above in a large pan and let set for 24 hours.
Drain the next day and wash the cucumbers several times in cold water.
Cover with water and let sit for 3 more hours and then drain.
Combine 1 cup white vinegar with 1 small bottle of red food coloring.
Pour over the cucumbers along with enough water to cover.
Simmer on stove for 2 hours and then drain.
Combine 2 c white vinegar with 2 cups water and 10 cups of sugar, 8 cinnamon sticks and a small box of red hots candies.
Bring to a boil and simmer until red hot candies melt.
Pour over the cucumbers and stir, let cool and cover.
Reheat the cucumbers to a simmer every day for 3 days and stir well.
On 3rd day, pack cucumbers into jars and cover with the hot syrup and water bath 5 min.
Makes 8 pints
