Ingredients:
2 links summer sausage (or sausage of your choice)
2 small zucchinis / diced
1 onion / diced
2 tomatoes / diced
1-2 teaspoons Cajun seasoning
1 package Uncle Bens Microwavable Rice
1 can corn
Slice and sauté the sausage in olive oil
Remove from pan and retain oil once browned.
add the zucchini, onions and tomatoes and stir to combine.
Add Cajun seasoning and cook till zucchini is softened.
Add in the corn and add back the sausage and stir well to mix.
Add in the rice, mix well, and let cook 4-5 minutes till rice is softened.
Serve hot
