This southern potato salad is made the old-fashioned way with tender potatoes, boiled eggs, creamy dressing, just the right amount of tang, and that homemade flavor you just can’t buy in a tub from the grocery store.
This recipe is perfect for Independence Day, Memorial Day, Labor Day, summer BBQs, potlucks, and Sunday dinners. Ingredients
4 1/2-5 lbs potatoes diced and cooked
1/2 cup diced onions
1/2 cup chopped celery
8-10 hard boiled eggs – chopped
1 1/2 cup mayonnaise
1/4 cup vinegar
1/2 cup sugar
1/4 cup mustard
salt to taste
pepper to taste
1. Put the potatoes, onions, celery and eggs in a large bowl and mix to combine.
2. In separate bowl combine the mayo, vinegar, sugar and mustard and mix well. Add salt and pepper to taste.
3. Pour the mayo mixture over the potato mixture and mix to combine.
4. Taste and additional salt/pepper to taste. _______________________________________________________________________
