Closing menus can make CJ reappear during Coffee cutscenes as well grant him movement. If you can store your vehicle in a garage before the Coffee cutscene ends, you can keep the proofings in your vehicle without needing to sink it.
The reason I was granted movement in the first date was because I refused the gym fight, which ends the mission. Other missions like Pimping could be used, but this option is a bit faster.
