HOW TO MAKE SAUERKRAUT SOUP | SOUP RECIPE | RECIPE USING SAUERKRAUT

INGREDIENTS:
6 cups chicken broth
2 cups cooked chicken
1 cup finely diced onion
2 stalks finely diced celery
2 finely diced carrots
3 medium peeled and diced potatoes
1 - 24oz sauerkraut - may need to rinse and drain if salty
1-2 strips of finely diced bacon
2 Tbsp. tomato paste
salt and black pepper
1/4 tsp. thyme
2 Tbsp. oil

In a pot on medium heat add oil, onions, celery, carrots, salt and black pepper.
Cook and stir for 3-4 minutes or until veggies start to soften.
Add diced bacon, cook and stir for another 2-3 minutes.
Add tomato paste, cook and stir for 1-2 minutes.

Add chicken broth. Turn heat up to bring to simmer.
Add thyme or any seasonings that you like. A bay leaf or two is also good.
Simmer for 15 minutes.

Add sauerkraut and potatoes. Stir to combine and bring back up to simmer.
Partially cover and cook for 10-15 minutes or until the potatoes are tender.

Add chicken and any seasonings.
Cook and stir for 3-4 minutes.

How to Make BEST Restaurant Chinese Hot and Sour Soup

INGREDIENTS:
6 cups chicken broth
1/3 cup julienne carrots
1/3 cup julienne bamboo shoots
1/2 cup black fungus - hydrated
1/2 cup sliced shitake mushrooms - hydrated
1 cup sliced extra firm tofu
1 tsp. minced ginger
1 tsp. finely sliced red chilies
1/4 cup light soy sauce
1/4 black vinegar
1/2 tsp. dark soy sauce
1/4 tsp. white pepper
1 tsp. chili paste (sambal)
2 beaten eggs
slurry - 3 tbsp. cornstarch mixed with water
2-3 chopped green onions

Chicken or pork:
3/4 cup sliced julienne chicken or pork
1 tsp. light soy sauce
1/2 tsp. Shaohsing wine or rice wine vinegar
1/8 tsp white pepper
1/2 tsp. corn starch
*Mix together well

In a sauce pan add chicken broth and turn heat up to high.
Add in minced ginger, mushrooms, bamboo shoots, carrots and red
chilies. Stir, bring up to a boil, reduce to simmer and cook for
5-8 minutes.

Add chicken and stir.

Add soy sauce, black vinegar, dark soy sauce and white pepper.
Stir, bring back up to a simmer and cook for another 3-4 minutes.

Add in cornstarch slurry and bring back up to a boil.

Pour beaten eggs over top, wait 5-10 seconds and then give gentle
stirs.

Add tofu and cook for another minute.

Serve and garnish with chopped green onions.
Enjoy.

HOW TO MAKE POTATO SOUP | EASY POTATO SOUP RECIPE STEP BY STEP | TESS COOKS 4U

INGREDIENTS:
5-6 medium russet potatoes - peeled and cubed 1/2 to 3/4" pieces
2 cups cooked chicken
4 cups chicken broth
2 cups milk
1 small diced onion
1 finely diced carrot
3-4 cloves minced garlic
sprinkle of cayenne pepper - optional
4 Tbsp. butter
4 Tbsp. flour
2 Tbsp. olive oil
1/2 tsp. salt
1/4 tsp. black pepper
1 cup grated cheese
1/2 cup sour cream
parsley for garnish

In pot add olive oil, diced onions and carrots.
Cook and stir for 3-4 minutes.
Add butter and minced garlic. Cook and stir for 30 seconds and then
add flour. Cook and stir one minute or until flour absorbed.

Add potatoes, broth and milk. Stir. Turn heat up to bring to simmer.
Taste for seasonings and add spices.
Cook for 15-20 minutes or until the potatoes are fork tender.

Partially blend soup with mixer. Taste for seasonings.
Turn heat down to low.
Add chicken and cheese. Stir and mix well until cheese melted and chicken
heated through.
Turn off heat. Add sour cream and stir.

Serve with parsley garnish. Enjoy.
