Bacon and Eggs Breakfast Fried Rice Recipe

INGREDIENTS:
3 cups loosely packed cooked jasmine rice
3-4 pieces crumbled cooked bacon
3 eggs
4 garden onions - whites and greens separated
3/4 cup finely diced bell peppers
2 cloves minced garlic
2 tbsp. soy sauce
1 tbsp. oyster sauce
2 tsp. unsalted butter
2-3 tbsp. reserved bacon fat

*Whisk eggs. Add butter to medium heat pan. Scramble eggs until done and then remove from the pan.

*Add bacon to same pan. On medium high heat cook until crispy, remove, drain on paper towel and crumble into pieces. Reserve 2-3 tbsp. of bacon fat.

In same pan on medium to med high heat with bacon fat, add whites of garden onions, bell peppers, salt and black pepper.
Cook and stir for 1-2 minutes.
Add minced garlic, cook and stir for 1 minute.
Add rice, cook and stir until combined.
Add light soy sauce and oyster sauce. Cook and stir to combine.
Add in cooked eggs and crumbled bacon. Cook and stir to combine.
Add chopped green onions. Cook and stir to combine.
Serve.
Enjoy.

Fried Potatoes with Onions & Peppers Recipe ~ The Secret to Browning

INGREDIENTS:
3-4 peeled and diced russet or gold potatoes
1 cup diced onions
1 cup diced green bell peppers
1/4 tsp. salt
sprinkle of black pepper
sprinkle of garlic powder
sprinkle of paprika
vegetable oil

Soak potatoes for 2-3 hours or overnight is better.
Rinse and dry potatoes.
In skillet on medium high heat (8) add oil and dried potatoes.
Spread out potatoes and let cook for 3-4 minutes.
Stir and let cook another 1-2 minutes.
Add onions. Cook and stir for 2 minutes
Add bell peppers. Cook and stir for 2 minutes
Add seasonings. Cook and stir for 1 minute.
Serve.

2 strips cooked crispy bacon
