A monumentaly beautiful cut of meat.
Carved off a locally sourced Fallow deer.
Truthfully, I don't think it can get any better than this? local wild game at its finest.
I never have, or will, get bored of butchering such wonderful meat, its a sheer pleasure to work on carcasses of such high quality, immaculately shot, gralloched and dressed out.
