✿ Veganlovlie Recipes / Tamarind Chutney - Mauritian Vegan : Today’s recipe is a spicy, sweet and sour chutney made with sun-kissed ingredients like tamarind and chillies.

I am using tamarind paste that comes in a block. It is usually available at any Asian or Indian store (or get it online, link below).
I drew inspiration for this apple tamarind chutney from culinary traditions of a spicy tamarind compote known as ‘takkar’ in Mauritius.
Jaggery is my preferred sugar in this recipe. You can find jaggery at Asian or Indian stores and also online.

This What I Ate Wednesday food day was shot on the day after St. Patricks day, Wednesday March 18th. I had some nice filling food on that day, starting with vegetable pancakes for brunch and a delicious Irish stew for dinner.
I also had a little surprise with my grocery delivery this week when I received 3 bags of sweet potatoes instead of just 3 sweet potatoes. I still have a couple of bags left until today. So I need some ideas to use them up. Leave me a comment for any suggestions. :)
