Basic Bao Dough (makes 6 baos)
1 cup all purpose flour*
1/3 cup cornstarch
1/2 cup warm water
1/2 tsp yeast
2 tbsp sugar
1/4 tsp salt
1/4 tsp vinegar (just a small amount to keep the baos white)
1 tbsp vegetable oil
1 tsp baking powder
*We've always used all purpose flour to make baos and it has never failed us. Not sure how other flours will turn out in this recipe but feel free to experiment!
Mix 1 spoon of the sugar and yeast with water and wait until foamy. Mix flour, cornstarch, remaining sugar and salt together. Make a well and pour in yeast mixture, vinegar and oil. Knead for 5 minutes until a smooth ball forms. Place in an lightly oil bowl, cover and allow to rise for an hour and a half or until doubled in size.
Once dough has doubled in size punch out all the air. Form a 1-inch disk and evenly sprinkle baking powder. Knead dough for 3 to 4 minutes to fully incorporate baking powder. Cut into 6 even pieces. Roll each piece into a ball and roll out each ball to an oval shape, about 1/4 inch thick. Lightly oil and fold to make a halfmoon shape.
Place in a steamer and cover and steam for 10 minutes on medium heat. For optimum fluffiness do not open the lid while buns are cooking. Wait 5 minutes after turning off heat before opening the lid. Stuff baos with fillings of your choice.
Bao No.1
Southwest tofu scramble, sauteed onions and bell peppers, vegan sausage, diced tomatoes and cilantro
Prepare vegan sausage as per instructions on package.
1 small onion sliced
1 bell pepper sliced
On medium heat, saute onions and bell peppers with a drizzle of olive oil for 8-10 minutes or until onions are caramelized.
Southwest Seasoned Tofu Scramble
100 grams extra firm tofu (roughly crumbled)
1 tbsp nutritional yeast
1/2 tsp black salt* or regular salt
1 tsp garlic powder
1/2 tsp onion powder
1 tsp paprika
1/2 tsp cayanne pepper
1/2 tsp oregano
1/4 tsp cumin
1/4 tsp turmeric
Mix tofu with seasoning blend and cook on medium heat with a drizzle of olive oil for 6-8 minutes or until thoroughly heated.
Bao No. 2
Basic tofu scramble, sauteed mushrooms & spinach, dill sauce and green onions
8-10 cremini mushrooms sliced
2 packed cups of spinach
On medium heat, melt 1 tbsp of vegan butter. Add mushrooms and cook for a few minutes until brown. Add 1 clove of finely minced garlic and a good pinch of salt. Add spinach and cook for 1-2 minutes until spinach has just wilted.
Basic Tofu Scamble

1/2 tsp black salt* or regular salt

1/2 tsp onion powder
1/4 tsp turmeric
Mix tofu with seasoning blend and cook on medium heat with a drizzle of olive oil for 6-8 minutes or until thoroughly heated.
Easy Dill Sauce
1 small boiled potato (about 1/2 cup)
1/2 cup hot water
1 tbsp vegan butter or olive oil
1/2 tsp dijon mustard
1/4 tsp paprika
2 tsp lemon juice
1 tsp dried dill or 1 tbsp fresh chopped dill
salt to taste
Blend everything up until smooth. If needed, thin sauce with 1 tsp of water at a time to desired consistency.
*Kala Namak aka black salt is a type of Indian rock salt that imparts a sulfuric smell and taste to foods. It is great for mimicking an egg-like taste onto foods. Give it a try in your next tofu scramble.

Today we present to you a twist on a classic stir-fry noodle dish. Meet the Pad Thai pasta salad. Perfect for when the hot and muggy weather hits and you crave something fresh and colourful. Toss in your favourite veggies or whatever you have on hand. Give it a try, it's easy to make, comes together quickly and great for a picnic or potluck, just mix in the sauce when ready to serve. Ingredients
300 grams of firm tofu
salt and pepper
1 tbsp chunk of tamarind + 1/4 cup hot water
or 2 tsp apple cider vinegar + 1/4 cup of water
1 garlic clove finely minced
1 large shallot finely chopped
1 tbsp vegan fish sauce* or 1 tbsp soy sauce/tamari + 1/4 tsp salt
1 tbsp light flavoured oil (we used grapeseed oil)
2 tbsp sugar or sweetener of your choice
250 grams of dried pasta of your choice (use rice pasta for a gluten free option)
3 cups vegetables of your choice (we used diced bell peppers, diced cucumber, shredded carrot & mung bean sprouts but feel free to add in your favourite veggies)
Cilantro & roasted peanuts and lime wedges for serving
*Vegan fish sauce may be hard to come by but it does exist! This is the brand we use http://phuclamchay.vn/xem-san-pham/nuoc-mam-chay-au-lac-550-ml-ms-v2-075.html#.WT9ybMm1uQg (not an affiliated link)
If you can't find it, fret not, you can use soy sauce with an extra pinch of salt as a substitute. Vegan fish sauce is a bit on the saltier side compared to soy sauce.
Prepare firm tofu by cutting into 1/2 inch cubes and liberally sprinkling salt and pepper on them. Spread on a baking sheet and bake at 375 degrees F for 20 minutes or until crisp.
If using tamarind paste, first dissolve in hot water and strain out pulp and seeds. Mix tamarind paste with remaining ingredients and refrigerate the sauce for 30 minutes to allow flavours to mingle. Stores well in the the fridge for up to 2 weeks.
Prepare pasta according to package. Chop vegetables into small dices or shreds.
In a large mixing bowl, gently toss together cooked pasta, chopped vegetables and Pad Thai sauce. Adjust amount of sauce to taste.
Serve with crispy tofu and garnish with fresh chopped cilanto & crushed roasted peanuts and lime on the side

Mangoes are finally in season in Canada so today we are super excited to share with you a delicious Thai dessert that's very popular in the Kale Sandwich household when summer rolls around. This easy dessert is made with glutinous rice aka sticky rice drizzled with coconut milk and served with a side of fresh cut mangoes. It's the perfect ending to any meal and it's only 6 ingredients! Enjoy!

Ingredients
1 cup glutinous rice (sweet rice)
This dessert does require the rice to be soaked for at least 4 hours so plan ahead or soak the rice overnight.
1 cup coconut milk
3-4 tbsp sugar (depends on how sweet you like it)
large pinch of salt
1 pandan leaf or 1/2 tsp vanilla extract
1/2 tsp cornstarch + 1 tbsp water (optional step to thicken the coconut milk to a sauce)
Mango variety of your choice
Sesame seeds for garnish
Soak rice in water for at least 4 hours to overnight. Rinse and drain after soaking. Place rice in steamer lined with a banana leaf* or cheesecloth/ muslin cloth. Fill pot with just enough water to it doesn't touch steamer. Cover and steam on medium-low for 20-25 minutes or until rice is tender but still has a bite.
Combine coconut milk, sugar, salt and pandan leaf/ vanilla and bring to a low simmer for 5 minutes. Remove from heat and pour half of the mixture onto steamed rice. Mix and set rice aside for 15 mintues to allow rice to absorb coconut milk. Return the remaining coconut milk to a low simmer and pour in cornstarch mixture to make a sauce. Stir constantly and remove from heat once thickened.
Serve rice with a generous side of fresh cut mangos and coconut sauce. Garnish with sesame seeds and mint if desired.
*Steaming with banana leaf gives the steamed rice a wonderful unique fragrance. It can be found in the frozen section in most Asian grocery stores but if you cannot find banana leaf you can line with cheesecloth or muslin cloth. If have a steamer with small holes or mesh you do not need to line it.

Today we are super excited to present to you one of our favourite East meets West fusion recipes. Here's our take on a classic Philly cheesesteak sandwich but with Bulgogi "steak" and super easy vegan mozza style cheese. Give it a try, it's an explosion of flavour! In this recipe, we used the seitan bulgogi in a sandwich but feel free to eat it with rice or salad wraps. Enjoy!

Ingredients
Seitan
1 cup wheat gluten
2 tbsp chickpea flour
2 tbsp nutritional yeast
1/2 tsp garlic powder
1/2 tsp onion powder
1 tsp smoked paprika
1 cup water
1 tbsp olive oil
1 1/2 tbsp soy sauce
1 tbsp tomato paste
Combine and mix dry ingredients in a large bowl. Mix wet ingredients together and pour into wheat gluten mixture. Stir until combined. Knead 3-4 minutes to develop gluten. Allow mixture to rest for 5 minutes. Knead a few more times and shape into a 1-inch thick disc. Wrap with a layer of parchment paper followed by a layer of tinfoil. Bake at 325 degrees F for 45-50 minutes. Slice, cube, chop seitan and use in any recipe as a meat substitute.
Bulgogi Marinade
1/2 medium onion
1 medium apple (peeled and cored)
3 garlic cloves
1 scallion/green onion
3-4 tbsp soy sauce (depends on sodium content of brand you're using)
1 tbsp roasted sesame oil
Puree onion, apple, garlic and green onion to a paste. Stir paste into soy sauce and sesame oil.
Marinate seitan slices in bulgogi sauce for at least 1 hour (or overnight). In a lightly oiled frying pan, on medium-high heat saute 1/2 a sliced onion for 1 minute. Add 7-8 sliced mushrooms and continue frying for 2-3 minutes. Add marinated seitan slices and cook for 6-8 minutes.
Vegan Cheezy-Mozza
1 cup water
1 small potato (boiled, about 1/2 cup)
1/4 cup raw cashews (soaked for at least 2 hours)
2 tsp tapioca starch
1 tbsp nutritional yeast
1/2 garlic powder
1/2 tsp salt
1/4 tsp pepper
Blend everything together until very smooth and liquidy. Pour into a small saucepan and cook over medium heat until thickened. Stir constantly, it will thicken very quickly.

Ingredients
1.5 lbs napa cabbage (about 15-20 leaves)
3 tbsp Korean salt or coarse sea salt (iodine free is best)
1/2 Asian brown pear or 1 bosc pear
1 inch Korean radish
1/2 onion
4-5 cloves garlic
3 inch of ginger
1 tbsp Korean chili pepper flakes (optional, more for colour not spice)
Brine Ingredients
2 cups water
2 tsp salt
1 tbsp sweetener (we used maple syrup)
Cut cabbage into bite size pieces. Rinse and drain. Sprinkle salt all over cabbage leaves and massage for a few minutes. Set aside for 2 hours mixing every 30 minutes. The cabbage should be wilted and a bit translucent. If you're not sure if it's salted enough just add an extra 30 minutes of salt time. Rinse cabbage leaves 3 times and drain well.
Prepare other ingredients. Peel pear if desired and cut into thin slices. Cut off a chunk of radish and peel skin. Cut into thin pieces. Thinly slice onion, garlic and ginger. Add everything plus chili pepper flakes to drained cabbage in a large mixing bowl and mix thoroughly.
Make brine by combining water, salt and sugar/syrup.
Transfer cabbage mixture into a container or jars and leave at least a 1-2 inch gap. Pour in brine until cabbage is just covered. The liquid content will increase as the radish and pear in the kimchi ferments.
Ferment at room temperature away from direct sunlight for 24-48 hours. Fermentation will depend on the temperature of the room. Carefully open lid after 24 hours to release air pressure.(*IMPORTANT: The kimchi will release gas as it ferments so this must be done so jar does not explode. If fermenting in warmer temperatures, open the jars every 12 hours. Open slowly... the jar may make hissing noises, do not be alarmed, it is not angry. Place jar or container upright in a shallow tray just in case kimchi juice leaks from the jars while fermenting.)
Taste the kimchi after fermenting for 24 hours. Move to the fridge once kimchi tastes sour/slight tang, it will continue to ferment slowly in the fridge. In warmer climates it will be faster (about 24 hours) in cooler temperatures it may take up to 2 days (48 hours).
You can eat all parts of this kimchi, even drink the probiotic brine. White kimchi does not last as long as red kimchi so it's best consumed within 3 months for optimum freshness.

*The orange sauce recipe written will make enough sauce for 2 batches of tofu. You can either store half the sauce in the fridge for up to a week and reheat it when you make more crispy tofu or just halve the sauce recipe or double the tofu recipe!
Ingredients
Crispy Tofu
18-20 rice crackers (crush to a small crumb size)
350 grams firm tofu (drained, patted dry)
1.5 tbsp soy sauce/tamari
1.5 tbsp olive oil
1/4 cup cornstarch
Orange Sauce*
3/4 cup vegetable broth
1.5 tbsp soy sauce/tamari
1 tbsp rice vinegar
3 tbsp brown sugar or sweetener of your choice
1 tsp minced garlic
1/2 tsp grated ginger
1/4 tsp chili pepper flakes (optional)
1/2 tsp orange zest
1 medium sized orange
salt to taste (depends on sodium content of vegetable broth/soy sauce, you may not even need to add salt)
1.5 tbsp cornstarch
2 tbsp water
green onion and sesame seeds for garnish
Crispy Tofu
Preheat oven to 400 degrees F (205 degrees C). Crush rice crackers until you have a small crumb. Cut tofu into 1/2 inch cubes. Mix soy sauce into tofu cubes and allow to absorb for 5 minutes. Gently stir in olive oil until all cubes are evenly coated. Sprinkle on cornstarch and gently mix to coat tofu. It will become sticky. Toss tofu with crushed rice crackers until evenly coated, press gently to help it stick to tofu. Lay out on parchment paper and bake for 20-25 minutes.
Orange sauce
Peel and cut orange. Toss in blender/processor with vegetable broth, soy sauce, rice vinegar, sugar, garlic, ginger, chili pepper flakes & orange zest and blend until smooth. Mix cornstarch into water to create a slurry. Bring orange mixture to a boil on high and reduce to a medium simmer for 5 minutes. Give cornstarch mixture another stir and add to orange sauce. Stir immediately and cook for an additional minute or until thickened. Add salt to taste if needed. Remove from heat.
Toss baked tofu bites with orange sauce (you will probably only use half the sauce, store remainder in a jar or lidded container in the fridge) Jazz it up with green onions and sesame seeds. Serve immediately. Enjoy!

How about some delicious muffins for Sunday brunch? Here's our incredibly simple recipe for vegan Morning Glory muffins. We don't really bake much because we're terrible at baked goods but these muffins never fail us and they're super delicious and nutritious to boot! Most people like to grate the carrots, but this is way easier and less time consuming. Feel free to add any nuts, seeds and dried fruit to your liking. These kinda remind us of the muffins we use to eat at Second Cup Coffee Co. from our non-vegan days.

Dry Ingredients
2 cups flour
1/2 cup oatmeal
2/3 cup sugar
2 tsp baking soda
1 tsp cinnamon
1/4 tsp salt
1/3 cup chopped nuts (we used a mix of pecans & walnuts)
1/3 cup shredded coconut
1/3 cup raisins (or any dried fruit of your choice)
Wet Ingredients
2-3 carrots (small-medium size; about 250 grams total)
1 apple
2/3 cup pineapple (drained if using canned)
1/2 cup water
3 tbsp melted coconut oil
1 tsp vanilla extract
Combine dry ingredients together in a mixing bowl and set aside. Blend carrots, apple, pineapple and water. Pour wet ingredients (including vanilla and melted coconut oil) into dry ingredients and mix until just combined. (Try not to over-mix the batter, it's okay if flecks of flour remain).
Preheat oven to 375 degrees F (190 degrees C). Lightly grease muffin pan or use muffin liners. Fill with batter and bake for 20-25 minutes or until toothpick come out clean. Cool on a rack or paper towel lined plate. Enjoy!
Makes 12-14 muffins.

Ingredients

Cheese Sauce
1 small carrot/ about 1/2 cup (boiled until just tender and drained)
1/3 cup water
1/2 tsp apple cider vinegar
1 1/2 tbsp tahini
2 tbsp nutritional yeast
1/4-1/2 tsp salt (adjust to taste)
1/2 tsp garlic powder
1/2 tsp onion powder
1/8 tsp turmeric (optional, for a touch of yellow colour)
Blend everything together until very smooth.
Pizza toppings:
Cheese sauce
Veggie ground round (fry for 4-5 minutes to brown)
2 tbsp sesame seeds
a few slices of pickles
sliced onions
Top with shredded lettuce and Mac Sauce
*BAKING NOTE: We bake our pizza at a very high temperature (450-475 degrees F) for 8-10 minutes. It bakes very quickly this way and give the crust the perfect crunch and flash cooks the toppings. Ingredients:
1 small dill pickle finely diced
1/2 small onion finely diced (about 3 tbsps)
1/3 cup vegan mayo (we used Veganaise, you could use homemade vegan mayo)
1 1/2 tbsp dijon mustard
2 tbsp ketchup
Mix everything together. Done! Tastes even better when chilled for a few hours or overnight. Store in the fridge for up to a week.

Ingredients
Vegan Fish Balls
325gr firm tofu*
1 tsp salt
¼ tsp black pepper
½ tsp garlic powder
½ tsp onion powder
25 gr roasted seaweed (we used 2 individual serving packs)
½ cup potato starch
½ cup wheat gluten
*Tofu must be firm so it forms a stiff yet bouncy dough. If you use soft/medium tofu there will be too much water content for the amount of wheat gluten written in the recipe for the correct texture
In a blender or food processor, blend tofu until smooth. Transfer to a mixing bowl and add salt, pepper, garlic & onion powder. Add cut seaweed and mix well. Next add potato starch and mix throughly until combined. Add wheat gluten last, it will bind together very quickly once you start kneading it. Knead for 1-2 minutes until a ball forms and roll into smaller pieces. You could make any shape you want at this point, just make sure they are all uniform in shape and size so they cook evenly. We roll them to about the size of a large marble, 1 inch diameter.
Heat up 1/2 inch of oil on medium heat (350 degrees F) and carefully add fish balls. Do not overcrowd the pot/pan because they will expand slightly. Cook for 5 minutes until light, golden and crispy. Remove with a slotted spoon and drain on paper towel or rack.
Easy Curry Sauce
3 tbsp minced shallots
1 tsp curry powder (use your favourite, we like Madras curry powder)
¼ tsp chili pepper flakes (optional)
½ tsp sugar
¼ tsp ground white pepper
2 tsp soy sauce
1 cup water
½ tbsp cornstarch
Salt to taste
Mix curry powder, chili pepper powder, pepper & sugar with soy sauce and 1 tbsp of water to form a paste. Mix cornstarch into water and set aside. In a pan on medium heat, add 1 tbsp of oil and shallots and fry for 2-3 minutes until lightly browned. Add curry paste and fry for 30 seconds until fragrant. Add cornstarch water and stir. Bring sauce to a boil to thicken. Reduce to low heat and add about 15-20 fried vegan fish balls. Simmer for 10 minutes stirring occasionally. Serve with rice or noodles or on skewers as an appetizer. Enjoy!

Ingredients
5 cups vegetables of your choice (chopped and sliced)*
5 cloves garlic (finely minced or crushed)
3/4 cup vegetable broth/stock
2 tsp thickening starch (cornstarch, potato starch or tapioca starch)
1 tsp sesame oil
salt to taste, depends on the sodium content of the vegetable broth
1-2 tbsp oil for cooking (2 tbsp will make it taste more like Chinese restaurant style stir-fry)**
Mix vegetable broth & starch and set aside. On high heat in a wok or large pan (use medium-high heat if using a non-stick/ teflon coated pan) add oil & minced garlic and fry for 5 seconds. Quickly add vegetables. Stir-fry for 3-4 minutes constantly moving vegetables in the pan. If using low sodium vegetable broth, add in a good pinch of salt. When vegetables are a minute from being cooked, add vegetable broth mixture and continue cooking for 1-2 minutes until sauce has thickened. Do not overcook the vegetables so they still have a nice crunch. Remove from heat and drizzle in sesame oil. Mix and serve immediately. Enjoy!
*To make the cooking process easier we like to cut the vegetables according to their density/thickness so they all cook at the same time evenly. For example, thinly slice harder veggies such as carrots and vegetable stems. Cut softer vegetables like mushroom and bell peppers into manageable pieces but not too small. Broccoli and cauliflower work well as small florets.

Vlog 63 WE USE TO SELL BURGERS BEFORE WE WERE VEGAN • Congrats Newlyweds!
Today we bring you a veganized recipe for our favourite Halloween treats... caramel apples! But this is no ordinary caramel, for this caramel requires no cooking and it's actually kinda healthy... no, this is not a trick! It's a delightful treat made with dates! We loaded these caramel apples with a variety of candies, cookies, nuts and chocolate, they are seriously decadent! So get creative and mix flavours to your heart's content.
Date Caramel Ingredients
2/3 cup Medjool dates (remove pits)
1 tbsp coconut oil
1 1/2 tbsp vegan milk of your choice
1 tsp vanilla
1 tsp liqueur *optional (cognac, bourbon, rum, brandy, etc.)
pinch of salt
4 apples of any variety (Best if apples are cold to help the date caramel firm up faster. Also, remove as much of the wax layer from the apples as possible if they are waxed)
Toppings of your choice (nuts, candy, cookies, chocolate, cereal, seeds, etc.)
Put date caramel ingredients in a blender or food processor and blend until smooth. It may take a few minutes, scrape down the sides of the blender to help it blend. Insert a candy stick, popcicle stick or wooden chopstick into the apple either at the top or bottom, whichever way the apple stand up properly. Spread mixture evenly between 4 apples and refrigerate for 15-20 minutes. Once caramel layer has firmed up slightly, dip and press on toppings of your choice on. If using chocolate, refrigerate once more for 15-20 minutes to set the chocolate before serving. Enjoy!
Store in the fridge for up to 1 week.
Makes enough caramel for 4 apples. Feel free to use the date caramel as a dip for apple slices or fruits.

Vlog 61 BIRTHDAY KARAOKE BONANZA • Priscilla Update
Ingredients
1/3 cup uncooked rice*
3 cups vegetable stock/ broth
1 large king oyster mushroom (sliced)
Chinese fried donut sticks, roasted peanuts**, shredded lettuce, green onions and ginger.
On medium heat, combine rice with vegetable stock and bring to a boil stirring constantly. Reduce to a low simmer and cook for 25 minutes stirring every 5 minutes. Do not fully cover the pot, the congee will bubble and boil over.
Slice mushrooms and lightly score with criss-cross pattern if desired. Lightly season with salt & pepper. Panfry on medium-high in a lightly oiled pan for 1 minute on each side. Set aside until congee has cooked.
Taste congee to check on rice texture. Add a bit of water if you prefer a runnier congee consistency. Once congee is cooked, add mushrooms and remove from heat. Salt to taste depending on sodium content of vegetable stock used.
Serve with lots of roasted peanuts, shredded lettuce, green onions, ginger and Chinese donut sticks on the side. Makes 2 large servings.
*To make congee with cooked rice use the following measurements:
1 cup cooked rice
2 1/2 cups vegetable stock/ broth
Simmer for 15-20 minutes depending on congee texture/ consistency preference
Note: Brown rice may take longer to cook to a soft congee texture and may require a bit more liquid, adjust to preference
**Easy roasted peanuts:
In a pot or pan, add raw peanuts and enough salt to lightly coat bottom of the pot/ pan. On medium heat, roast peanuts stirring and moving constantly for 6-8 minutes. They will burn quickly if left alone so be sure to pay close attention as they roast. Remove from heat once they are fragrant and peanut skin is browned.

We also show you how to make a simple dipping sauce that's very popular in Khmer cuisine. This recipe is super easy to whip up for lunch or dinner, great for those days when you're pressed for time and want something super tasty and restaurant-like! We hope you enjoy our take on vegan lok lak!
Ingredients
255 grams vegan beef cubes/ chunks/ slices*
1/2 small onion (thinly sliced)
Optional: 1/2 cup of fresh pineapple cubes
Lok lak sauce
1/2 cup water
1 tbsp light soy sauce
1 tbsp dark soy sauce
1 tbsp ketchup
1/2 tsp black pepper (we like coarsely ground pepper for this dish but any kind will do)
2 tsp cornstarch or tapioca starch or potato starch
1 tsp vegan butter
1/4 tsp sesame oil
Dipping sauce
1 clove of garlic (finely minced)
1/4 tsp black pepper
1/4 tsp salt
1/4-1/2 tsp sugar adjust to taste
1/2 lime juiced
Serve with lots of fresh lettuce and sliced tomatoes & cucumbers
*We used a vegan beef alternative to create this dish but feel free to substitute it for tofu, tempeh or any meat alternative you prefer if vegan beef is not available to you... but seriously, if it is TRY IT!!! (NOT A PAID PROMO OF ANY SORT FOR ANY BRAND)
To make the dipping sauce, mix garlic, black pepper, salt, sugar & lime juice and set aside. To prepare lok lak sauce, mix water, soy sauces, ketchup, black pepper & cornstarch together and set aside. Butter and sesame oil will be added last in the cooking process.
On medium high heat, add 1 tbsp of oil and onions and stir-fry for 30 seconds. Add vegan beef cubes and cook for 4-5 minutes or according to package instructions. Once vegan beef is fully cooked add lok lak sauce mixture and stir until sauce has thickened, about 1 minute. Turn off heat and add butter and sesame oil. Stir until butter has melted and serve on top of fresh greens with the dipping sauce on the side. Enjoy with steamed rice, fresh baguette or crispy fries.
Optional step: With the sauce that is left in the pan, add some rice and stir-fry on medium heat for a few minutes to make a simple tasty fried rice. The rice will soak up all the delicious saucy goodness!

Vlog 59 WHAT I ATE IN A DAY (VEGAN)
In this recipe we used canned young green jackfruit to mimic the char siu pork and it works wonderfully. The texture is spot-on. If you are unable to find young green jackfruit, feel free to substitute it with tofu, seitan or meat alternative of your choice. The sauce is what gives this dish it's classic Chinese BBQ flavour. Make sure you hunt down Chinese 5-spice powder (or make your own blend), it's essential for the char siu flavour.
This recipe makes 6 baos. In the video, we doubled the recipe and made 12.
Ingredients
Bao dough
1 cup all purpose flour*
1/3 cup cornstarch
1/2 cup warm water
1/2 tsp yeast
2 tbsp sugar
1/4 tsp salt
1/4 tsp vinegar (just a small amount to keep the baos white)
1 tbsp vegetable oil
1 tsp baking powder
Jackfruit Char Sui
1 can of young green jackfruit (rinsed, squeezed and shredded)
1 tbsp ketchup
1 tbsp hoisin sauce
1 tsp light soy sauce
1 tsp dark soy sauce
1/4 tsp sesame oil
1/2 tsp garlic powder
1/2 tsp paprika
1/2 tsp Chinese five-spice powder
1/4 tsp each salt & pepper
1-2 drops of liquid smoke (optional)
1 tbsp sugar (optional, we like ours a bit sweeter)
*We've always used all purpose flour to make these types of Chinese baos and it had never failed us. Not sure how other flours will turn out in this recipe in terms of softness and fluffiness of the buns after streaming but feel free to experiment!
To make the dough, mix 1 tablespoon of sugar and yeast with warm water and allowed to rest for 10 minutes until foamy. Mix flour, cornstarch, sugar and salt. Make a well and pour in yeast mixture, vinegar and oil. Knead for 5 minutes until a smooth ball forms. Place in an lightly oil bowl, cover and allow to rise for an hour and a half or until doubled in size. You will need the baking powder later, do not mix it in now.
To make the vegan jackfruit char siu, mix ketchup, hoisin, soy sauces, sesame oil and spices. Add a drop of liquid smoke if desired. Rinse and squeeze out excess water from jackfruit. Cut off hard core and shred top portion with hands. Cut the core into small pieces. On medium heat, add 1 tablespoon of oil into a pan, add jackfruit and fry for 5 minutes. Add sauce mixture and fry for 10 minutes. If mixture gets too dry while frying you can add a bit of water at a time. Set mixture aside while dough rises.
Once dough has doubled in size punch out all the air. Form a 1-inch disk and evenly sprinkle baking powder. Knead dough for 3 to 4 minutes to fully incorporate baking powder. Roll into a cylinder and cut 6 even pieces. Roll each piece into a ball and roll out each ball to a 6 inch circle, about 1/2 centimeter thick. Fill each circle with 3 tablespoons of jackfruit filling. Pleat around the edge of the circle to bring in all the sides, push filling into the middle as you pleat. When you reach the end pinch and twist the top to seal. Place each bun on a square of parchment paper and steam for 10 minutes on medium heat. Do not open the lid while buns are steaming to get extra fluffy soft buns. Enjoy!
Char siu baos can be reheated and eaten the next day. Just microwave for 20-30 seconds or re-steam for 3-4 minutes.

Vlog 58 DINOSAUR GHOSTS & PURE SOULS • RIP Kokanee
Ingredients
1 med zucchini
1 med carrot
1 med onion
2-3 cloves of garlic
2-3 med tomatoes (we used 4 small ones)
dillweed or any herbs you like (bay leaf, rosemary, thyme)
salt and pepper to taste (we used about 1/2 tsp salt, 1/4 tsp pepper)
2 tbsp olive oil
Slice zucchini and carrot into 1/2 cm rounds. Thinly slice onion. Roughly mince garlic. Cut tomatoes in half. Mix zucchini, carrot, onion and garlic with oil, herbs and salt & pepper in an oven safe dish. Top with tomatoes cut side down and bake at 400 degrees fahrenheit (200 degrees celsius) for about 1 hour or until veggies are soft when pierced with a fork. Cool for 20 minutes before blending (it is very hot so be careful). Blend to desired consistency and store in an airtight container or jar for up to a week in the fridge. Enjoy!

RUSSIAN ZUCCHINI SPREAD Kabachkovaya Ikra • Easy Vegan Recipe
Ingredients:
3 regular bananas or 6 small Asian bananas (Saba or apple bananas)
500ml water (2 cups)
1 pandan leaf (optional) or 1/4 tsp vanilla extract
1/3 cup small tapioca pearls
2-3 tbsp of sugar (adjust to taste depending on how sweet your bananas are)
1/8 tsp salt
200 ml coconut milk (about 3/4 cup)
Bring water to a boil. On a medium-low heat, add pandan leaf and simmer for 10 minutes to extract the flavour from the leaf (Omit this step if not using pandan leaf). Cut bananas into 2 inch pieces and add to water with tapioca pearls. Simmer for 5 minutes on medium-low. Add sugar, salt and coconut milk (and vanilla if using). Bring to a boil and remove from heat immediately. Allow mixture to sit at room temperature for 1 hour. The tapiocas will plump up as the dessert cools down. Serve warm or at room temperature with crushed peanuts or sesame seeds. Or super cold, that’s the way we like to eat it sometimes. Enjoy!

Mauritian White Bean Curry
2 1/4 cups (430g) cooked white beans
1 tbsp ginger (minced)
1 small onion, diced
2 cloves garlic (finely minced)
2 large tomatoes (diced)
1-2 red or green chilis (optional)
1 tsp vegetable oil
1/4 tsp fenugreek seeds (optional)
1 tbsp curry powder
1 tsp turmeric powder
1/2 tsp garam masala
1/2 tsp coriander seed powder (optional)
6 – 8 curry leaves or 1 – 2 bay leaves
Salt to taste
Cilantro for garnish
Oil-free Roti (Farata/ Paratha)
1 1/2 cup [240g] all-purpose flour
200 ml boiling hot water
More flour for dusting

VEGAN OYSTER STYLE SAUCE RECIPE HERE:

Ingredients
200 gr dried rice noodles (soaked and cooked)
3 cups chopped Asian greens (gai lan, yu choy, bok choy or vegetables of your choice)
1 cup tofu, seitan or mock meat of your choice
2 cloves garlic minced
1/3 cup vegan oyster sauce
2 tbsp soy sauce/ tamari (we used 1 tbsp light & 1 tbsp dark to give the sauce more colour, but you can use all regular)
1 tsp sugar
Or without the vegan oyster sauce:
2 tbsp light soy sauce
2 tbsp dark soy sauce
1 tsp sugar
Crushed roasted peanuts and lime wedges (optional)
NOTE: We would recommend an oil like grapeseed, soybean, canola etc. as an all purpose cooking oil, especially when cooking with woks. It is not recommended to cook at high temperatures with coconut oil or extra virgin olive oil. These oils have a very low smoke point. Soak dried noodles for 15 minutes in warm water until soft and drain. Cook noodles in a pot of boiling water for 1 minute or until al dente (undercooked is better, they will continue to cook in the stirfry). Rinse under cold water and drain and set aside.
In a wok or skillet on high heat, add 2 tbsp oil, stems/ any hard veggies such as carrots & minced garlic. Stir fry for 30 seconds and add tofu. Cook for an additional 30 seconds. Add noodles, leafy greens & sauce mixture and mix throughly to combine. Cook for about 1 minute mixing continuously until leaves are wilted. Plate and serve immediately with a topping of peanuts and a wedge of lime. Enjoy!
Makes 2 large servings.

Ingredients
3-4 medium size dried shitake mushrooms
1/4 tsp wakame seaweed or 1 inch square of kombu seaweed
1 cup very hot water
2 tbsp soy sauce
2 tsp sugar
1/4 tsp salt or to taste depending on how much sodium is in your soy sauce
1 tsp cornstarch or tapioca starch
Soak mushrooms and nori in hot water for 10-15 minutes or until soft. Gently squeeze excess water out of mushrooms, reserve liquid and seaweed for later. Trim hard stem off mushroom and roughly slice mushroom.
Fry sliced mushrooms on medium heat with a tiny drizzle of oil for 3-4 minutes or until slightly browned. In a blender, combine water + seaweed, fried mushrooms, soy sauce, sugar, salt & cornstarch and blend until very smooth and no large chunks remain.
Pour mixture into a small saucepan and stir over low- medium heat until sauce is thickened and has come to a slight boil. Remove from heat and cool to room temperature. Store in an airtight container or jar for up to a week in the fridge. Freeze for up to 3 months. Enjoy with everything!
