I finally have a recipe for this absolute banger of a dish that had me going back for thirds the first time @hongthaimee made it for me. A hidden gem of northern Thailand: pork & tomato curry noodles - kanom jeen nam ngiew.
It's not a difficult dish, just takes a bit of time to simmer, so I recommend making it on the weekend and enjoy it throughout the week. It tastes better the next day anyway!
