Kao kluk gapi is half-fried-rice-half-salad, and it's probably my favourite Thai rice dish ever! It's a dish that combines so many flavours and textures into one dish, yet somehow nothing clashes, and everything just works perfectly. Whoever came up with this combo was a genius.
The rice is salty and umami.
The caramel pork is sweet and chewy.
In Thailand we always add green mango which are sour and crunchy, which I sub with lime-marinated carrots.
The chilies are, of course, spicy.
I've used so many adjectives and I haven't even covered all the components you find on a plate of kao kluk gapi! This is the magic of this dish
Just remember to open windows when you cook the rice ;)
