This simple and classic baked tuna stuffed bell peppers recipe creates a comforting and filling meal. It is a twist on a tuna melt, with the savory filling and melted cheese cooked inside a tender bell pepper "boat".

Tuna Stuffed Peppers Recipe:
Ingredients
2 large bell peppers, any color
1 (5-ounce) can chunk tuna, packed in water or oil, drained
¼ cup mayonnaise
2 Tbsp. minced celery
2 Tbsp. finely diced red onion
1 tsp. Dijon mustard
½ cup shredded cheddar cheese, divided
Salt and pepper to taste

Directions:
Preheat your oven to 375°F (190°C).
Wash the bell peppers and slice them in half lengthwise. Remove the seeds and membranes.
Place the bell pepper halves on a baking sheet. For softer peppers, you can brush them with a little olive oil and roast them for 15–20 minutes before filling.
In a medium bowl, combine the drained tuna, mayonnaise, celery, red onion, and Dijon mustard. Season with salt and pepper.
Spoon the tuna mixture evenly into each bell pepper half. Top each with half of the shredded cheese.
Bake for 20–25 minutes, or until the peppers are tender and the cheese is melted and bubbly.
Serve immediately and garnish with a sprinkle of chopped parsley
Tips for a flavorful meal
Adjust pepper tenderness. For a softer texture, roast the empty pepper halves for about 15 minutes before adding the tuna filling. If you prefer a crunchier pepper, skip this step.
Add extra ingredients. Mix in some extra ingredients with the tuna for more flavor and texture, such as:
¼ cup sweet relish
2 Tbsp. capers
¼ cup chopped olives
A pinch of smoked paprika
Switch up the cheese. While cheddar is a classic, you can also use mozzarella, Swiss, or a Mexican cheese blend for a different flavor.
Make it healthier. Swap the mayonnaise for Greek yogurt for a lighter, tangier filling.
