The Town of Bamberg is a beautiful and interesting UNESCO World Heritage Site. It's one of Germany's best-preserved medieval town centres, and has a fascinating Slavic influence as well owing to centuries of trade with Poland and Czech Republic. Aside from the gorgeous Altrathaus (Old Town Hall) which sites on a tiny island in a stream, there's also a big cathedral, a lot of half-timbered houses, and even an intriguing area known as "Little Venice".
