This is one of the best soups I have ever had! Impress yourself and anyone able to enjoy this decadent dish. We combine the wholesome flavors of kabocha squash with other vegetables and spices to create a delicious soup with a liquid smooth texture. Ingredients:
Squash of Choice - Sliced (Japanese Pumpkin)
1 Tbsp Ginger - Minced
3 Cloves Garlic - Minced
Whole Onion - Chopped (or shallot)
3 Cups Vegetable Stock
1 Can Coconut Milk
Cooking Oil
1 Cup Nutritional Yeast
1 Tsp Turmeric
Salt
Cilantro
Pinch of Cinnamon (optional)
Chili Flakes (optional)
Kabocha Squash "Liquid Gold" Soup
Preheat oven to 400 degrees
Prepare the veggies. Cut squash into large slices to fit on baking sheet. Chop the onion and mince garlic & ginger.
Place squash slices evenly on baking sheet and drizzle cooking oil. Shake sheet to spread oil to bottom of slices. Add salt and place in oven for 20 minutes or until tender.
Set pot on oven to medium-high and add 2-3 Tbsps of cooking oil. Once oil is hot add onions and brown. Add ginger and garlic, stir and add vegetable stock. Set pot to low if squash is prepped.
Once squash is tender remove from the oven and peel squash from the skin. Can put squash directly into pot or use immersion/blender. This will affect overall texture.
Add to blender with can of coconut milk and blend til smooth texture.
Add blended mixture to pot and stir thoroughly.
Salt to taste and add optional spices. Serve and enjoy!

![The Ultimate Vegetarian Quesadilla Recipe

Recipe: Serves 4
3 Tablespoons of Butter
1/2 Cup of Onion (Sliced)
2 Cloves of Garlic (Chopped)
1 16 oz can of Beans [kidney, cannellini, or black] (Drained and mashed)
1/2 Cup of Spinach
1/2 Cup of Mushrooms
1 1/2 Cups of Cheese (Shredded)
1 Cup of Frozen Corn
Salt to Taste
1/2 Cup of Salsa
4 Tortilla Shells
Instructions:
1. In a large pan, fry onions and garlic with knob of butter on medium high heat. Then proceed to add mushrooms, fry for a minute, and then kidney beans, corn and salsa. Mix and salt to taste. Once hot, remove mixture into separate container.
2. Clean the pan out with a paper towel and return to heat. Lower to medium. Add a knob of butter to the pan, let it melt, and place the tortilla. Swirl it to spread the butter. Add 1/4 of cheese on top. Then add 1/2 of your Quesadilla mixture, or less if you want to make more Quesadillas. place another 1/4 of the cheese on top and top it off with the Tortilla. Press down lightly so the Quesadilla sticks together. Once the Quesdilla has cooked on one side for 2-3 minutes, flip and cook the other side for 2-3 minutes or till a nice browning is achieved.
3. Repeat step two for remaining Quesadilla(s). Cut and enjoy delicious Quesadillas with Greek yoghurt, salsa, and/or guacamole.
