Hello, welcome to EZ Eatery! With chilly weather knocking on our door, it is time to pull the crockpot or pressure cooker and make some comfort food. Today we are making a 15 Bean Soup. It is so quick and so easy to throw together in the pressure cooker. It takes far less time than using the stove top and crockpot. Because this makes so much soup, I halved the reciper, but I'll put the full recipe below. Let's go put it together!
Pressure Cooker 15 Bean Soup
1 20 oz Package Hurst's Hambeans 15 Bean Soup Mix
2 TBSP Olive OIl
1 Onion
2 Bay Leaves
2 Cloves of Garlic, minced
2 Ribs Celery, chopped
3 Carrots, chopped
8 C Chicken Broth
1/2 tsp Black Pepper
1 TBSP Thyme
2 Ham Hocks or Ham Bone
1 14 oz Can Diced Tomatoes
Pour the beans into a strainer. Rinse the beans and discard any debris. Set aside. Turn the pressure cooker to the saute function. Add olive oil, onion, bay leaves, carrots, celery, and garlic. Cook, stirring occasionally, until onion starts to turn translucent. Add the beans, broth, and salt and pepper. Stir together. Add the pepper, thyme, and ham hocks. Turn off the saute setting and close lid, making sure the vent is sealed. Set the pressure cook time to 60 minutes. When the cook time has finished, let the pot sit undisturbed for 15 minutes, then release the remaining pressure. Use tongs to remove the hamhock and add the diced tomatoes. Taste and adjust seasoning as desired. That is it! Enjoy!
