Hello, welcome to EZ Eatery! Today we're cooking on a budget and making something incredibly easy and delicious!...pasta primavera! With times being tough right now, this is a simple dinner solution and extremely economical. It will easily feed a family of four too!
Ingredients:
1 TBSP Olive Oil
1 Medium Zucchini, coarsely chopped
1 C Fresh Baby Carrots, chopped
1/2 Onion, sliced
1 Package Pasta Roni Angel Hair Pasta With Herbs
1 C Cherry Tomatoes
1 Small Can Mushrooms
2 Garlic Cloves, chopped
1 C Corn, optional
Parmesan Cheese, optional
In a large skillet, heat oil over medium heat. Add zucchini and carrots until carrots are tender. About 7 minutes. Stir in onion, garlic, mushrooms, and corn. Cook for about 2 minutes. Add tomatoes and cook for additional minute.
Meanwhile, prepare pasta mix according to package directions. Add to vegetable mixture, toss to combine. Sprinkle with parmesan cheese and black pepper, both optional. That's it! Enjoy!
