Hello, welcome to EZ Eatery! Looking for an easy and impressive Valentine's Day gift or dinner idea? Make this air fryer taco charcuterie board! I couldn't help but notice Valentine's Day falls on a Tuesday, which every Tuesday is a big deal for Mexican food in my area. I mean, we call it Taco Tuesday! So what else to make for the special occasion? Tacos, quesadillas, and taquitos! We are making this the easiest way possible, with little (but flavorful) ingredients. It turns out super cute and is sure to impress your loved one this Valentine's Day.
Air Fryer Tacos
Mini Street Corn Tortillas
1 lb Ground Beef
1 pkg Taco Seasoning
3/4 C Water
1/2 Can Refried Beans
Shredded Cheese
Cook up the ground beef according to the package directions on your taco flavoring seasoning package. Add 1/2 can of refried beans and mix until nice and smooth. Warm the tortillas in a damp paper towel in the microwave for 30 seconds. Add mixture to the tortilla and add a bit of cheese to it. Fold over and proceed with remaining mini tacos. Use spray oil to coat outside of taco shell. Air fry at 360 (F) for 7 minutes. That is it!
Air Fryer Chicken Taquitos
Corn Tortillas
1 Can Chicken
1/2 pkg Taco Seasoning
Shredded Cheese
Combine chicken, seasoning, and shredded cheese in a bowl. Warm tortillas in a damp paper towel in the microwave until warmed through (about 30 seconds). Place about 1 - 2 TBSP of chicken mixture into middle of tortilla and roll up. Place on air fryer rack and spray outside tortilla shell with spray oil. Air fry at 360 (F) for 7 minutes. That is it!
Heart Shaped Mini Quesadilla's
2 Large Flour Tortillas
Shredded Cheese
1 TBSP Butter
1 Heart Shape Cookie Cutter
Take your large tortilla and cut out heart shapes with your cookie cutter. Melt butter in pan on stove top. Add heart shape tortilla, then cheese, then top with another heart shaped tortilla. Cook for approximately 2 minutes, then flip and cook for additional 2 minutes. These can also be air fried at 360 (F) for about 5 minutes (flipping halfway through).
Optional Serving Suggestions:
Tortilla Chips
Pico De Gallo
Sour Cream
Guacamole
Herdez Guacamole Salsa (HIGHLY recommend)
Shredded Lettuce
Chopped Tomatoes
Jalapenos
Shredded Cheese
