Today we make the Bali Hai from the Hanalei Plantation Hotel. This recipe, shared in the summer of 1964, calls for a Collins mix, champagne, and Okolehao. While most of you will not have Okolehao, subbing in another light rum will work well here. This drink is light, and refreshing, and not one to showcase big, pungent or dark rums.
The drink gets it's name from the 1958 film adaptation of South Pacific, which was filmed in Hanalei Bay.
