These watermelon cupcakes are super easy to make and absolutely adorable. You definitely do not have to make the frosting watermelon flavored if you don't want to but I think it makes them extra fun!
Watermelon Cupcakes
1 white cake mix (plus ingredients to make the cake mix)
green and red gel food coloring
3 sticks butter, room temperature
3-4 cups powdered sugar
1 teaspoon watermelon Kool-Aid mix
1/2 cup mini chocolate chips
green cupcake liners (optional)
splash of milk or half and half
Mix up the cake mix according to the package directions. Add in green gel food coloring. Depending on the brand and kind you are using, use enough to get a bright green color. Color will darken after baking. Bake for18-20 minutes.
Let cupcakes cool completely before frosting.
To make frosting, beat the butter until soft and pale in color. Add in powdered sugar and powdered Kool-Aid and mix until fully incorporated. Add in enough red food coloring to get the pink color you are after. Add in a splash of milk or cream to thin it out and make it a creamy consistency.
Frost the cupcakes and add on a few mini chocolate chips to the top.
