This recipe is really special to me. My Nanny used to make this and it is a family favorite.
Erma's Mexican Cornbread
2 eggs
1/2 C oil
1/2 C buttermilk
1 c yellow cornmeal
1 tsp. baking soda
1 tsp. salt
1 C cream corn
1 onion chopped
4 oz. shredded cheddar cheese
1 jalapeno
Add 1-2 tablespoons oil to the bottom of a cast iron skillet. Swirl it around to evenly coat the bottom and place into the oven. Allow pan to preheat with the oven and get nice and hot. Preheat oven to 400°F.
Add all ingredients to a blender. Blend until well combined. Pour into hot oiled skillet. Bake at 400° for 20-25 minutes.
