Today, I'm gonna show you how to make Japanese Mazesoba (まぜそば ); it's an easy brothless ramen also known as mazemen or abura soba. Mazesoba means "mixed noodles," and it gets its name from the way you mix the noodles with the sauce and toppings when you eat it. For my recipe, I've created an efficient method for preparing a flavorful maze soba taré with scallion and ginger, as well as a spicy pork topping that creates an authentic bowl of maze soba that's as good as the best ramen restaurants in Japan.

1 teaspoon chicken bouillon powder
1/8 teaspoon salt
1 tablespoon rice vinegar
1 tablespoon toasted sesame oil

For spicy pork topping
100 grams ground pork
8 grams garlic (grated)
1 tablespoon doubanjiang
2 teaspoons sake
2 teaspoons potato starch
3 tablespoons dashi stock
2 teaspoons oyster sauce
To assemble
260 grams ramen noodles (2 servings)
nori (shredded)
1 teaspoon toasted sesame seeds
2 egg yolks (optional)
