Cinco de Mayo, a mysterious holiday to most Americans, but one that is synonymous with drinking. It is a celebration of the David and Goliath victory the Mexican's had over the French at the first battle of Puelba. The president and first lady at the time, Benito Juárez and Margarita Maza, both came from Oaxaca. The same way that Champagne has to come from the Champagne region in France and Scotch has to be made in Scotland, Oaxaca is the only place in the world where mezcal can be made. So mezcal makes the perfect base spirit for a Cinco de Mayo cocktail.
The drink is smoky, but light and balanced with a slightly spicy finish on the back of the throat. It's very easy to drink. There are a lot more mezcals available on the market today, so it will be pretty easy to find a good one. The Del Maguey Vida Mezcal is probably one of the most readily available and really richly flavored. The smoked piña comes out, right out in front. The Drunken Crane Cucumber Chipotle bitters really round out this concoction. This is a fairly simple cocktail to mix up. It's the perfect cocktail for Cinco de Mayo or any other day where you need a celebration.

.5oz Simple Syrup
3 Dashes Cucumber Chipotle Bitters
