Raspberry Syrup is not used in as many cocktails as Simple Syrup (youtu.be/62YNp0jgzvU), but it is a key ingredient in some great ones like The Blinker, Brandy Punch, The Cranston, The Japalac and, an original concoction called, the Doctor of Journalism. The best part is, it's really easy to make. It takes some time, but very little effort. It's basically, infusing simple syrup with raspberries. Because the raspberries are a little more temperamental and perishable than simple syrup on its own, I would highly recommend spiking this one and definitely storing it in the fridge. If it's being spiked with vodka, does that technically make this a liqueur or a cordial? Who knows? That's probably a question for Oxford or Webster. Either way, you're going to love the result, a bright, sweet and tart, delicately balanced syrup that works wonders in cocktails. Cheers!
Recipe:
1 Cup Sugar
1 Cup Water
12 oz Raspberries (two standard 6 oz trays)
1 oz Vodka (optional)
Add same portion of sugar and water to a pot.
Heat and stir until all crystals have dissolved.
Remove from heat, allow to cool.
Wash raspberries, pour into sealable container and lightly muddle.
Pour simple syrup over raspberries and let rest overnight.
Strain out solids.
Optionally, add an ounce of Vodka to help preserve it.
Store in the refrigerator.
