Learn how to make Shahi Kheer (Makhana Pudding) Recipe by Manjula
Ingredients:
4 cups whole milk
1 1/2 cups makhana (puffed lotus seeds)
1/2 cup rice (cooked and mashed)
1/2 cup sugar
2 Tbsp almonds (blanched and sliced, approx. 2 Tbsp)
2 Tbsp pistachios (blanched and sliced, approx. 2 Tbsp)
1/4 Tsp cardamom (crushed)
saffron (Few strands)
2 teaspoons ghee (clarified butter)
Instructions:
-Microwave the makhana for 30 seconds until crisp, then slice them into 2-3 pieces.
-In a heavy-bottomed pan over medium-low heat, melt ghee. Add makhana and sliced almonds, roast for 2 minutes.
-Add milk and rice, increase heat to medium-high, bring to a boil. Then reduce heat to medium and let it boil for 18-20 minutes, stirring occasionally.
-Add cardamom, saffron, and half of the pistachios.
-To caramelize sugar in another heavy-bottomed saucepan over medium heat, grease generously, then add sugar. Stir continuously until sugar melts and turns light brown. Turn off the heat when it becomes golden brown (4-6 minutes).
-Add the caramelized sugar to the hot kheer and return it to low-medium heat, stirring to ensure it mixes completely. Boil for another 2-3 minutes until the kheer reaches a soft pudding consistency.
-Garnish with remaining pistachios and serve warm.
