Handvo Baked Lentil Cake 🍰🌶️ Discover the deliciousness of Handvo

Wash and soak the rice, chana dal, toor dal, and urad dal in water for 4 hours. After draining, blend the soaked ingredients with ginger and green chili to a coarse texture, then add yogurt, turmeric, salt, sugar, and asafetida, and blend again. Let the mixture ferment for 10-12 hours. Once fermented, mix in shredded opo squash, oil, lemon juice, and ENO. Grease an 8x8 baking pan and pour in the mixture, sprinkling sesame seeds on top. Heat oil, add mustard seeds and asafetida until the seeds crackle, and drizzle this over the batter. Cover with foil and bake at 350°F for 20 minutes, then remove the foil and bake for another 20 minutes until golden brown. Allow the handvo to cool for 15 minutes before cutting it into 16 pieces and serving.
