Ingredients:
2 lbs Russet or Yukon Gold potatoes, thinly sliced (\(1/4\)-inch)
1 medium onion sliced thin like potatoes
2 cups Chicken Stock
4 oz Pimentos, drained and chopped
2 cups Shredded Swiss cheese (or a mix of Swiss and sharp Cheddar)
1 tbsp Butter (optional, for dish)
1 tsp Garlic powder or 2 minced garlic cloves
1 tsp Salt (or to taste)\(1/2\) tsp Ground black pepper
Instructions
Prep: Preheat oven to 350°F (\(175^{\circ }\text{C}\)).
Grease a 9x13-inch baking dish.
Arrange half the sliced potatoes in the dish.
Top with half of the pimentos and half of the Swiss cheese.
Repeat with the remaining potatoes, pimentos, and cheese.
Chicken stock evenly over the top of the potato and cheese layers.
Bake: Cover the dish tightly with aluminum foil and bake for 60-75 minutes.
Remove the foil and bake for an additional 15-20 minutes, or until the potatoes are fork-tender and the cheese is golden brown and bubbly.
Let the dish stand for 5-10 minutes before serving to allow the sauce to thicken.
