In Syracuse, Sicily, I wandered into Caseificio Borderi, a small shop crammed full of cheese. One of the family members kindly demonstrated the proper recipe and manner of tasting Ragusano, a stretched-curd cheese made with whole milk from modicana breed cows, raised exclusively on fresh grass or hay from Ragusa or Syracuse, Sicily. It was awarded Italian Denominazione di Origine protection in 1955 and EU Protected Designation of Origin status in 1995.
