In this video, I’m showing you how to make a rustic seeded sourdough bread with spelt flour. This loaf is packed with sunflower, pumpkin, and flax seeds, with even more seeds on the outside for a beautiful crunchy crust. The spelt flour adds a slightly nutty flavor, while honey gives the bread just a touch of sweetness.
I’ll take you through the entire process, from preparing the seeds and feeding the starter the night before, to mixing, stretch and folds, bulk fermentation, shaping, cold proofing, scoring, and baking in a Dutch oven.

Ingredients:
Seed Soaker
-25 g sunflower seeds
-25 g pumpkin seeds
-25 g flax seeds
-75 g boiling water
Sourdough Starter
-20 g sourdough starter
-50 g water
-50 g flour
Dough
-360 g water
-100 g active sourdough starter
-30 g honey
-150 g spelt flour
-350 g bread flour
-10 g salt
-Prepared seed mixture
Extra sunflower, pumpkin, and flax seeds for coating the loaf.
Bake at 500°F for 20 minutes covered, then reduce the temperature to 450°F and bake uncovered for another 15–20 minutes, or until deeply golden brown.
