This Pumpkin Monkey Bread is so easy and a perfect fall breakfast or dessert. You could use canned biscuits, cinnamon rolls, or crescent rolls for this recipe.
Pumpkin Monkey Bread
1 C Pumpkin
4 oz. Cream Cheese
1/2 tsp. Vanilla
1 C Brown Sugar
1 C Brown sugar
2 tsp. Cinnamon
1 stick Butter, melted
1 C Powdered Sugar
1/2-1 tsp. Cinnamon
1 Tbsp. Milk
2 cans biscuits
Preheat the oven to 350°F
Grease a Bundt pan well.
Put the pumpkin, brown sugar, vanilla, and cream cheese into a sauce pan. Heat over medium heat until it is all melted together.
Cut each biscuit into fourths. Roll into balls and dip in melted butter and then into cinnamon sugar mixture. Place half of the dough balls into the Bundt pan and then pour half the pumpkin mixture on top. Continue with the rest of the biscuit dough and then top with the rest of the pumpkin mixture. If you have any brown sugar or butter left, pour that on top.
Bake for 45-50 minutes. Let cool for 5 minutes and then invert on to a large plate or dish.
Make the icing and drizzle over cooled monkey bread.
