I use asian and latin flavorings to make my Pulled Pork Sandwiches. This is very balanced with just a hint of spicy in the background. See description below video for full recipe.
Ingredients:
1/4 cup coarse ground salt
2 Tablespoons coarse black pepper
1/4 cup chili powder
5 or 6 pound piece of pork shoulder
1 large onion sliced 1 inch thick
15 cloves or so of smashed garlic
2 cups orange juice
2 cups apple cider vinegar
1 cup water
Make your rub with the dry ingredients above.
Apply to your 5 or 6 pound piece of pork shoulder.
Put the onion and garlic into your Dutch Oven or Crock Pot.
Add your orange juice, vinegar and water.
Cover and bake 5 hours @ 250F
If using a crock pot, I would use half of the liquids... 1 cup OJ, vinegar and 1/2 cup water. I would cook in a crock pot on medium or low for 9 hours.
Be sure when baking, that you lid fits and fully closes to trap in all the steam.
Allow to cool for about and hour so you can handle the pork and cooking juices safely.
Remove your pork, then strain your braising liquid.
Pull pork into pieces and skim the fat from the braising liquid.
Sauce:
1 and 1/4 cups honey
1 cup orange juice
1/4 cup apple cider vinegar
2 Tablespoons Fish Sauce or Soy Sauce
2 Tablespoons Sambal Oelek
3 cups of the braising liquid
Stir the sauce ingredients together and pour over pulled pork.
Bake covered one hour @ 350F till bubbly.
In a crock pot, cook on high for 2 hours.
Your pork is ready now. You could pull some of the pork out before the sauce stage and just add some BBQ sauce to what you remove. That way you would have two different pulled pork sauces.
