This flavorful Carrot Ginger Soup is creamy with a nice touch of zing, thanks to the ginger. Make a large batch with your carrot harvest and freeze it for delicious eating all winter.

Ingredients:
-1 Cup chopped onions
-2 cloves finely chopped garlic
-2 heaping cups of chopped carrots
-4 Cups veggie broth
-Juice from half an orange
-2-3 Tbsp of grated fresh ginger
-2+ Tbsp of water

Method:
1. Start by adding onions to a stock pot, over medium heat. Add a splash of water if the onions stick.
Adding in the garlic. Cooking both until lightly browned.
2. Add in the chopped carrots. Cooking for about 5 minutes.
3. Add in veggie stock, orange juice, and ginger.
4. Cover and simmer for 30 minutes, until carrots are tender.
5. Blender with immersion blender or high-speed blender until smooth.
6. Serve!
