If you haven’t made party ribs yet, you need to start with these Pineapple Bourbon Party Ribs from our Ambassador Nick Nesgoda of Burnt Pellet BBQ on the new Weber Searwood XL 600 Pellet Grill. He loaded it up to the max for this cook with 6 racks of ribs. This grill can handle grilling for an entire party!
Recipe
• Preheat the Weber Searwood Pellet Grill to 275F, using cherry pellets for a sweet smoke flavor.
• Cut 6 racks of baby back ribs into individual ribs then generously season them on all sides with your favorite BBQ rub.
• Place them on the smoker at 275F for 2 hours, spritzing every 30 mins with pineapple juice.
• Make the homemade pineapple bourbon sauce by combining all of the ingredients in a pot then cooking over low heat until thick. Ingredients: 1 cup of ketchup, 1.5 cups brown sugar, ½ cup crushed pineapple, 8oz bourbon, 2 tbsp honey, 1 tsp each: garlic powder, coarse black pepper, salt
• After 2 hours, place the ribs in a foil pan, then add 4 tbsp of butter and 1 cup of BBQ sauce. Cover then place back on smoker for 45 mins.
Uncover them then let them cook for another 15 mins then serve warm and enjoy!

![Philly Cheesesteaks | DiningWithSkyler | Weber Genesis and Full Griddle Insert
When it comes to Philly Cheesesteaks, are you team cheese whiz or provolone? Follow along with Weber Ambassador Dining With Skyler as she makes Philly cheesesteaks on her Genesis Gas Grill with the Full Griddle Insert. Recipe 👇
For the Philly Cheesesteaks:
* 2 lbs thinly sliced ribeye steak (can sub sirloin)
* 2 tablespoons oil
* 1 large white onion, diced
* Salt and pepper, to taste
* 2 tablespoons A1 Steak Sauce seasoning
* 2 teaspoons onion powder
* 2 teaspoons garlic powder
* 6-8 hoagie rolls
* 6-8 slices provolone cheese (or other cheese of your choice)
For the Cheese Whiz:
* 2 cups grated sharp cheddar cheese
* 1 cup heavy cream
* Salt and pepper, to taste
Prepare the Cheese Whiz:
1. In a saucepan over medium heat, warm the heavy cream until it starts to simmer. Do not let it boil.Gradually add the grated cheddar cheese to the warm cream, stirring constantly until the cheese is fully melted and the mixture is smooth. If the sauce is too thick, you can add a little more cream to reach your desired consistency. Cover and work on your cheesesteaks.
Make the cheesesteaks:
1. Preheat the Weber Genesis Smart Gas Grill with the griddle insert over medium-high heat.
2. Add oil to the griddle. Sauté the onions until they are tender and caramelized, about 8-10 minutes. Season with salt and pepper.
3. Add a bit more oil if necessary. Add the sliced ribeye steak to the griddle with the onions. Spread out the slices to ensure even cooking. Season with salt, pepper, A1 Steak Sauce seasoning, onion powder, and garlic powder. Cook until the steak is browned and cooked through, about 5-7 min. Taste for seasoning. Split the steak mixture in half. Toss one half with half of the cheese whiz and add provolone slices to the other half until melted. Toss together.
4. Split the hoagie rolls and toast them on the griddle for a few minutes until they are golden brown.
5. Divide the steak and onion mixture among the hoagie rolls. Top each with either cheese wiz or a slice of provolone cheese. If topping with provolone, leave on the griddle and close until the cheese melts. #phillycheesesteak #griddle #grilling?
