Smoked Al Pastor tacos on the Searwood Pellet Grill with Weber Ambassador Dining With Skyler. The pellets are the source of heat and also add so much flavor to whatever you’re cooking. Skyler chose the Mesquite pellets to compliment the sweetness of the pineapple, spiciness of my al pastor style pork and contrast the brightness of the lime and cilantro garnish. 🍍
She used an authentic al pastor marinade recipe and cooked it at 350F for about 2-2.5 hours on the Searwood, until the internal temp registered 165F. She chopped the meat with the caramelized pineapple and plated on warm corn tortillas with white onion, cilantro and lime juice 🙌
