Grilled Mexican Street Corn (Elote)

Serves: 6
Prep Time: 5 minutes
Cook Time: 10–12 minutes

Ingredients
6 ears sweet corn, husks removed (or peeled back if using as a handle)
½ cup sour cream
½ cup mayonnaise
½ cup chopped fresh cilantro
1 garlic clove, minced
Zest and juice of 1 lime
1 cup crumbled Cotija cheese
1 tablespoon All-Purpose BBQ Seasoning (recipe below)
6 lime wedges, for serving

Directions
1. Preheat the grill to high heat.
2. Prepare the sauce: In a medium bowl, whisk together the sour cream, mayonnaise, cilantro, garlic, lime zest, and lime juice until smooth. Set aside.
3. Prepare the grill: Clean the grill grates with a grill brush and lightly oil or spray them with nonstick cooking spray.
4. Grill the corn: Cook the corn for 10–12 minutes, turning every 2–3 minutes, until lightly charred on all sides and tender.
5. Coat the corn: Transfer the grilled corn to a serving platter.
6. Generously brush or spoon the sauce over each ear until evenly coated.
7. Finish and serve: Sprinkle with the crumbled Cotija cheese, then season with the All-Purpose BBQ Seasoning. Serve with lime wedges.

All-Purpose BBQ Seasoning

Yield: About 2 cups
Prep Time: 10 minutes

Ingredients
¾ cup granulated sugar
½ cup sweet paprika
¼ cup kosher salt
⅓ cup dark brown sugar
2 tablespoons granulated garlic
2 tablespoons granulated onion
2 tablespoons ground black pepper
2 teaspoons chili powder
1 teaspoon dried oregano
1 teaspoon ground cumin
½ teaspoon cayenne pepper
½ teaspoon ground thyme
¼ teaspoon fennel seed powder

Directions
1. Combine all ingredients in a mixing bowl.
2. Transfer the mixture to a food processor and pulse until evenly blended.
3. Store in an airtight container for up to 3 months at room temperature.
