Hola y'all and happy Friday!! I've been traveling and quite tired lately so I haven't cooked much. On this night I decided to make something quick and easy. On my way home I stopped at the store and picked up some wild caught salmon. I decided to serve it with a corn salad, check out the recipe for that (coming up next). It was so quick yet so very yummy. It's not hard to get that perfect crisp on your fish, just use the right amount of heat, be sure your pan is hot and don't disturb the fish until it's ready to be flipped. I cooked the salmon for a total of about 6 minutes. Keep in mind though that if you don't serve your fish quick enough it will start to lose the crispiness. My two pieces of salmon totalled just a tad bit over 1/2 pound. Enjoy and I'll catch you in the next one.

1/2lb Salmon
1/2 tsp salt (or to taste)
1/2 tsp black pepper
2-3 Tbsp oil
